Dominant Function: Fe
Her priorities and concern are the well-being of those around her. Inspires them through her words, which she uses to either encourage them or make them feel better, like when she told Mario not to feel so bad at himself after failing that trial so many times, clearly lying about herself beating it at once but saying it was as hard just to make him feel better.
Auxiliary Function: Ni
She's also got Ni in the way she plans and knows what to do. Immediately has unconscious feelings for Mario's bravery which makes her allow him to join her journey, and even tunnel visions about Defeating Bowser with the Kong troops, not considering the possibility of that plan failing (which it did).
Tertiary Function: Se
Also, she's got lots of Se too. Highly athletic and aware of her surroundings. Has phenomenal acrobatic skills, stamina, driving skills, reflexes, and fight IQ, knowing some form of Judo.
Inferior Function: Ti
Peach is mainly guided by her emotions, but able to calmly strategize and detach herself from her feelings when under stress. Still her natural state is basing her actions on the emotions of those around her.
